What are yeast flakes?

Most people initially know yeast as a leavening agent. However, the microscopically small fungi in the yeast flakes are inactive due to their processing and are therefore no longer leavening. During the production of the flakes, certain yeast strains were first nourished, then rolled and finally heated for a short time.

However, even if they no longer have the properties of a leavening agent, they still have some advantages. For example, they are very suitable for thickening sauces, dressings, etc. The small flakes behave in a similar way to melt-in-the-mouth oat flakes.

They also have a delicious, tangy, hearty taste. The yeast flakes also contain various vitamins (e.g. A, B3, B5, B6, B7, B9, E), minerals (e.g. magnesium, calcium, sulphur) and trace elements (e.g. iron and zinc). You can find a nutritional table in the overview

What can you use the flakes for?

As already mentioned, yeast flakes can be used wonderfully in savory dishes such as soups, dressings, dips and spreads. Here they have a binding and seasoning effect at the same time. They are also widely used as a cheese substitute. Whether on bread rolls, pizza or over pasta dishes - yeast flakes cut a really good figure here! Alternatively, they can also be used in sweet dishes such as muesli.

By the way: some B vitamins are sensitive to heat. So if you want to enjoy them to the full, you should not cook the flakes, but only add them to ready meals.
