What actually is wholemeal bread?
We don't want to confuse you, but not every dark bread with grains is a real wholemeal bread! Some manufacturers try to create this effect by infusing their breads with malt and then giving them fancy names.
To be a genuine wholemeal bread, however, it must consist of at least 90% wholemeal flour. These specifications are laid down in the guidelines for bread and biscuits under food law. If the content is not met, the bread is a mixed bread. Our tip: It is best to ask for "pure wholemeal bread", then it also consists of 100% wholemeal.
Why should you buy wholemeal bread?
In fact, it wasn't that long ago that people only ever baked wholemeal bread. However, from the 19th century onwards, white flours began to be favoured, as they had a longer shelf life and kept the baked goods fresh for longer. The reason for this was the fats contained in the sprouts, which were also processed in wholemeal flour. Unfortunately, these quickly became rancid.
However, wholemeal products contain a much wider range of valuable ingredients. Their content of protein, fat and secondary plant substances is significantly higher, and they also contain more vitamins and minerals. This is because, as already mentioned, the whole grain has been processed.
Organic wholemeal bread – the safe solution!Your bread should not only be wholemeal, but ideally also certified organic. This is because when the whole grain is ground, all the other substances that enter the flour during growth, i.e. spraying agents, also get into the flour. Spraying is often carried out shortly before the harvest to ensure that the grains ripen evenly. However, all of these substances end up in our bodies.
With organically grown grains, there is no such risk. That's why we only sell certified organic wholemeal bread. We also only use raw materials from the region. For example, the rye flour for our wholemeal rye breads comes from the Schellehof farm in Struppen. Farmer André has also grown light grain rye especially for us. This type of grain is not as dark as the usual rye and ensures that the bread is slightly lighter in colour, as it used to be. The flavour is also somewhat milder.
Which wholemeal breads can you find here?
The classic is, of course, wholemeal rye bread, which you can find in numerous varieties. However, you can also buy wholemeal spelt bread. Buckwheat sprouted grain breads, barley sprouted grain breads or oat breads are a little more special. But unusual varieties such as our walnut and sauerkraut bread or our Essener bread are also very tasty.
They are all baked by us with a lot of love and according to sophisticated recipes. They offer the many advantages of a wholemeal product, supplemented by many other positive characteristics. For example, some of our wholemeal breads are explicitly gluten-free, while others do not use yeast and/or sourdough. This should also be cleaned regularly to prevent mould. If you need a particularly long shelf life, you should cut your wholemeal bread into slices, pack it into a freezer bag and then freeze it. This way, you can defrost it later in portions in the oven or toaster and enjoy!
