It all starts with wheat grains

First of all, we focus on the whole grain. You can do many different things with this alone. For example, you can grind your own flour or meal. Or simply let the small seeds germinate and start growing sprouts. You can even grow wheatgrass with them - so the possibilities are endless.

But you can always rely on the quality. This is because our whole grain wheat is cleaned with particular care and either not dried at all or only dried very gently after harvesting. This is what makes it so versatile. If you want to grind the wheat grains, you should pay attention to the flour maturation.

Fresh wheat flour does not yet have its full positive baking properties. Especially if you want to bake bread rolls or stollen, you should leave it to mature for a few weeks. However, the fresh product is just as suitable for normal cakes and, above all, bread. We bake with it ourselves in our bakery. And if you like, soon you can too!

From meal and flour

Do you want to start baking straight away? Then of course we also offer ready-ground products in our online store. Try our organic wholemeal wheat meal, for example. We offer this in coarse and finely ground form. Both varieties are ideal for baking bread and rolls. But it is also very attractive as a decoration on various baked goods.

Of course, you will also find different types of wheat flour in our range. For example, we stock type 550, 812 and wholemeal flours - all in Demeter quality. These types of flour are ideal for bread and rolls, but they also make fine cakes and pastries with ease.

We would also like to briefly introduce you to two special types of flour from our range: The organic Christstollen flour and the organic Ruch flour. Stollen flour is characterized by its extreme gluten strength. As a result, it makes even very greasy doughs rise and loosens them up wonderfully. Ruch flour, on the other hand, is only made from the outer layers of the wheat grain (but does not count as wholemeal flour). It therefore contains more minerals, proteins and fiber. The taste is also somewhat more intense and the color a little darker - ideal for bread and rolls!
