Did you know that a bread roll with this designation only has to contain 50% rye flour? Pastries of this type with a lower proportion are sold under the names ‘Schusterjunge’ or ‘Bauernbrötchen’, for example. A lot of wheat flour is often mixed with a lot of malt for better baking properties to give the appearance of a dark rye roll.
Not so at Bäckerei Spiegelhauer! We use as much rye as possible to bake our organic rye rolls. We don't even add any other flours to our yeast-free cranberry rolls made from wholemeal rye. And only the best spelt flour and malted barley flour are allowed in our Vinschgauer. You won't find wheat in any of our rye rounds, we promise! By the way: these delicious baked goods are also suitable for vegans without any restrictions.
This high proportion of rye, which is so important to us - and because it contains less gluten - gives our rolls their distinctive flat shape. Ideal for stacking in the bread box!
