Rye flour is particularly suitable for savory pastries, various breads (e.g. rye bread, mixed bread, brown bread) and rye rolls. Full-bodied wholemeal rye flour

In wholemeal flours, the whole grain is milled, which is why it is richer in vital substances. Bread and baked goods are also heartier and more aromatic. Please note, however, that wholemeal rye flour also binds moisture a little more. More water and more time for swelling are therefore recommended. A subsequent long dough rest makes your wholemeal rye bread particularly moist.

Incidentally, our two special varieties are a real highlight: champagne rye flour and wild rye flour. While the former brings a slightly sweet note to the baked goods, the latter impresses with its nutty aroma. In any case, both are a real secret weapon for the home bakery. Hearty wholemeal rye groats

Our Demeter wholemeal rye groats are fresh from the first grinding in the stone mill. It contains all the components of the rye grain. To prevent the fat-rich germ from becoming rancid, we recommend that you use the meal within three months.
