Potash has the property that it makes the cookies wider. It is therefore traditionally used to make Christmas cookies, especially gingerbread. It is suitable as a substitute for baking powder (but only for flat cakes and pastries). It ensures that even heavy doughs rise and become fluffy despite nuts, honey and fruit and is a leavening agent, also known as potassium carbonate.
