The clever way to preserve bread: Preserving in a bag
Anyone who likes to bake "bread in a jar" or is looking for ways to keep baked goods fresh for a long time without freezing will love these bags. In technical terms, we call them "pasteurizing bags". The principle is ingeniously simple: the baked bread is reheated in the bag.
Why in a bag and not in a jar?
-
Space-saving: bags are easier to stack in the larder than heavy jars.
-
No breakage: Ideal for sending home-baked bread to loved ones or for provisions when camping and hiking.
-
Safety: The heat resistance of up to 120°C means you can safely heat-treat the contents.
How the "bread preserving" in a bag works
If you want to preserve your bread for several weeks (e.g. for emergency supplies or on vacation), proceed as follows:
- Bake your bread and leave it to cool.
- Pack the bread (or half loaves/sections) into the bag and close it tightly with a clip, or seal the bag with as little air as possible in the bag. (Expands when heated and can burst the bag).
- Heat the packaged bread in the oven (pasteurize). As every oven heats differently, feel your way around the temperatures. Our foil can withstand up to 120°C, which is more than enough to sterilize the crust. For optimum shelf life, the bread must reach 75°C for 15 minutes in the core. This time may vary depending on the type of bread / bread quality / weight.
We recommend using the "Meater" for precise measuring.
- After cooling, the bread is protected from environmental influences by the thermal treatment. As long as the bag is undamaged.
Sharp-edged, wildly torn crusts can easily damage the bag!
