Our spelt winter cookies are universally popular.
With cranberries and cinnamon.

The sugar in the cookie is responsible for the typical cookie consistency - less sugar would mean fewer cookies.
If the cookies become hard, simply place them in a sealed tin with a thick slice of bread, the moisture will make the cookies nice and soft again.
