Organic wheat gluten / wheat protein 1 kg

Wheat gluten improves the volume of baked goods, especially with low gluten wheat flour.
It also makes the baked goods a little juicier, the dough firmer and therefore easier to work with.
We recommend adding 0.3 to 2 % of the flour quantity.
The wheat gluten makes the dough elastic and retains the_CO2 produced by the yeast during proofing,
The better the gluten, the more gas / CO2 it can hold.
For this reason, numerous other substances are used in modern baking agents to ensure that even "inferior" flours produce beautiful baked goods.
Mostly ascorbic acid, tartaric acid esters of fatty acids and a few other things.
Everyone has to decide for themselves whether this is necessary. In any case, more air in the roll does not add any flavor...

Gluten ist super als Zusatz zu Teigen für Low-Carb-Backwaren, Z.B. Pizzateig aus weißen Bohnen (gekochte Bohnen abtropfen lassen, pürieren und dann mit einem Gemisch aus Bohnenmehl und Gluten andicken, Hefe und Salz nicht vergessen ;-). Schon hat die Pizza einen höheren Gemüseanteil, ganz unabhängig vom Belag.
Auch bei Lein-, Mandel-, Kokos- oder Kürbiskernmehl können die Backeigenschaften mit etwas Gluten deutlich verbessert werden.

Man sollte vielleicht erwähnen, dass Gluten SEHR SCHNELL Wasser aufnimmt. Gibt man es zu einem Teig, der bereits Wasser enthält, kann es sehr schwer werden das Ganze noch vernünftig zu mischen.

Der Aufkleber mit den Nährwertangaben hat übrigens auf der Packung gefehlt. Vermutlich einfach nur vergessen, trotzdem ein wenig ärgerlich.
