Tapioca flour is made from the cassava root, which is naturally gluten-free, lactose-free, yeast-free and vegan.
It is incredibly versatile and is often used in Asian dishes, e.g. crab chips.
This starch can also be used to thicken sauces and is listed in some Thermomix recipes.
It is important to note that tapioca starch is warm-swelling (native).
It is therefore mixed with a little cold water like normal custard powder and then added to the hot liquid.
Depending on the amount used, different consistencies can be achieved.
As tapioca flour is gluten-free, it is also used for gluten-free bread and rolls.

Origin: Vietnam
Tapioca starch is obtained from the cassava root. The cassava plant is a shrubby plant that can grow up to 5 meters high.
Cassava can also be used to produce bioplastics, but the process is still in its infancy.
