Why einkorn? The gold of ancient grains
Einkorn is one of the oldest cultivated grains known to mankind. In our bakery, we use the whole grain to preserve its characteristic, slightly nutty taste. Compared to modern wheat, einkorn stands out with its golden yellow color and fine texture, which makes the cake particularly moist. Combined with a touch of spelt flour and de-oiled hazelnut flour, the result is a dough with depth and character.

The topping consists of 35% carefully selected berries. Strawberries, red and blackcurrants, blueberries, blackberries and raspberries ensure a balanced interplay between sweetness and subtle acidity.
