As we have been baking this bread for years, we have perfected the production process as our experience has grown. In doing so, we return to the original method. To be more precise, this means that we dry the whole thing gently for several hours at no more than 35 °C.

This preparation and germination of the grain preserves the plant-based, unsaturated fatty acids. This also applies to the other nutrients, such as proteins.
