Super Ersatz für herkömmliches Mehl
Ich ernähre mich seit einiger Zeit getreidefrei und habe nach einer Alternative gesucht um nicht ganz auf Brot, Brötchen und Kuchen zu verzichten. Ich probiere noch aus und für einige Sachen funktioniert das Maniokmehl hervorragend. Ich liebe meine Manioktortillas, so einfach und lecker.

Gleich mal das Rezept:
120g Maniokmehl
230ml Wasser
1 Teelöffel Olivenöl
Salz
Alles vermengen, 6 Bällchen daraus formen (oder weniger wenn man einen grössere Fladen machen möchte), kurz stehen lassen, mit einer Tortillapresse oder einer Pfanne platt pressen und ohne Öl in der Pfanne raus braten. Zum Frühstück mit Ei und Gemüse oder zu Mittag/Abend mit Fleisch und Gemüse. Die rohen Bällchen halten auch super im Kühlschrank für ein paar Tage.

Klassisch ist Pao de Quejo, brasilianische Käsebrötchen, Waffeln funktonieren auch, sind etwas bröckeliger als gewohnt. Als nächstes probiere ich Muffins, Kuchen usw.
