Green spelt is the unripe form of spelt, one of the oldest cereals in the world. Green spelt was already an important food in Germany in the Middle Ages. Its origins date back to times when the harvest often had to be brought in early due to weather conditions in order to protect the grain from losses. Early harvesting and subsequent drying over beechwood smoke gave green spelt its unmistakable, nutty taste.

Our organic green spelt is grown and processed using traditional methods in Germany. It is harvested when the grains are still green and soft.
