Gluten-free bread with sourdough flavor - easy to make yourself with our gluten-free sourdough.
Long shelf life due to drying, easy to dose.

Dosage: 8 to 10 % of the flour quantity
Replace 10 % of the flour with our dried buckwheat sourdough and your bread will have the typical sour note of sourdough bread, but it will still be gluten-free!

Recipe for buckwheat sourdough bread

Ingredients:

675 g buckwheat flour
75 g dried buckwheat sourdough
16 g sea salt (2 tsp)
5 g dry yeast
620 ml water (25 °C)
30 g sunflower oil

Mix all the dry ingredients together.
Slowly switch on the food processor and gradually add the water.
Knead the dough slowly for 2 minutes.
Add the oil and, if necessary, scrape in the flour from the side of the bowl with a dough scraper.
Add grains, seeds or bread spices to taste.
Knead slowly for 5 minutes
Grease a loaf tin well.
Knead the dough quickly for a short time to incorporate plenty of air into the dough for the yeast.
Pour the bread dough into the tin, scrape the bowl clean with a dough scraper and smooth out the dough in the tin.
Cover the dough with a cloth and leave to rise for about an hour, the volume should have doubled, then the bread can go into the oven. Preheat the oven to 220 °C and bake the bread for 10 minutes, then reduce the temperature to 180 °C and bake for an hour.
Tip the buckwheat bread out of the tin to cool and leave to cool on a rack.

Sowohl meine Frau als auch ich haben beide eine Gluten-Intoleranz, weswegen wir seit längerem einen Großteil selbst backen. Mit dem Bio Buchweizen Sauerteig haben wir nun auch noch eine Möglichkeit gefunden, einfacher und schneller zu variieren. Das Produkt ist sehr leicht in der Handhabung, hat einen angenehmen Geruch und auch der Geschmack ist sehr angenehm. Wir sind auf jeden Fall rundum zufrieden!

Sehr triebstarker Sauerteig!
Bei einem Trockensauerteig rechne ich eigentlich nicht mit großer Triebstärke und habe beim ersten Brot daher noch eine kleine Menge Hefe beigefügt. Der Buchweizensauerteig hat aber alleine schon eine ungeheure Triebkraft. Es empfiehlt sich, die angegebenen 8% zunächst mit etwas Mehl und warmen Wasser zu aktivieren. Eigentlich braucht man so die Menge von 500g gar nicht, denn der Sauerteig lässt sich problemlos vermehren.
Von mir also eine klare Empfehlung!
