Bake crispy, delicious bread rolls yourself
in-house mixture directly from the master baker

It is particularly important to us not to use sachets and premixes, which is why we mix our own baking mix.
This product could also be called "baking mix for bread rolls".

Another reason is that technical enzymes are added to most baking agents, but there are no long-term studies on how these affect the human body.

We use this baking agent with an addition of 2 % to the amount of flour.
Mainly for double rolls and white bread.

This product can also be described as a baking mix for bread rolls.

Recipe for bread rolls:

1000 g type 550 wheat flour (do not use 405)
25 g baking agent
23 g salt
20 g vegetable oil
20 g fresh yeast
570 g water 10 °C

Knead all the ingredients together well until a smooth dough forms. Place the dough in a bowl, cover and leave to stand at room temperature for 1 hour. Now place the dough on a floured work surface and weigh out 30 equal-sized pieces and shape them into rounds. Now leave the rolls to rise until they are nicely risen (30-60 minutes). Place in a warm place and make sure that the surface of the rolls does not dry out (cover). Now preheat the oven to 270 °C top and bottom heat. Place a heavy ceramic bowl or baking dish at the bottom of the oven. When the rolls are ready, place them in the oven. Then pour 100-200 ml of water into the bowl to create steam. Now quickly close the oven so that the steam stays in the oven. If your oven has a steam function, you can use this and save the bowl. Now turn the temperature down to 230 °C. The rolls will be ready after 15 to 20 minutes (depending on how brown they are). Temperatures and baking times may vary depending on the oven.

hat mich überzeugt
ich bin immer etwas skeptisch mit Mittel zur Gebäckverbesserung. Wenn man sich schon die Mühe macht und selber backt, dann soll auch keine Chemie mit rein. So habe ich bisher auch meinen toastbrot nur flussiges Gerstenmalz zugegeben. Als ich auf dieses Backmittel gestoßen bin, das wohl hauptsächlich aus Bohnenmehl besteht, habe ich es mal riskiert. Ich muss sagen, dass ich sehr begeistert bin. Mein Tost geht nochmal besser auf und die Krume wird super locker. Auch die rösteigenschaft hat sich m. E. noch verbessert. Ich werde es weiter verwenden und mal schauen wo es sonst noch Einsatz findet :)

Gibt sehr schöne Brötchen
Seit wir unsere Brötchen damit backen werden sie schön locker und bakommen eine hübsche Kruste. Wir mischen dabei dem selbst gemahlenen Dinkelmehl etwas Weizen 550 oder Dinkel 630 zu.
