Grown by our farmer.
It contains emulsifiers that improve dough formation.
It also improves oxidative processes in the flour, which contributes to a better formation of the gluten.
The color of the pastry becomes slightly more yellowish.
The addition of this flour is particularly recommended when making baguettes.

Bean flour is made from the inside of the bean, with the skin and seedling removed.
Between 0.5 and 2 % bean flour is added to 1 kg of flour.

The field bean (Vicia faba), cattle bean, Faber bean, fava bean, broad bean, broad bean, hog bean, large bean, horse bean, also known as broad bean.
Bean flour was also often used in times of emergency and war to reduce grain consumption.

As our bean flour is ground on a stone mill, it may contain traces of gluten.

der Apfelkuchen mit 400g Bohnenmehl ist wunderbar luftig geworden mit einem sehr feinen Geschmack! Für die Teigkonsistenz werde ich noch einmal Varianten ausprobieren, nach meinem Rezept wurde der rohe Teig relativ fest, deshalb habe ich noch Flüssigkeit zugegeben. Ich bin gespannt, wie sich das Mehl in meinem Buchweizenbrot mit Sauerteig macht!

Bohnenmehl ist nicht nur nährstoffreich sondern enthält u.a. auch Emulgatoren und verbessert dadurch die Backeigenscaften. Es unterstützt die Ausbildung des Klebers und wird auch Hülsenfruchtmehl genannt, weil es nicht nur aus getrockneten Bohnen sondern mitunter auch aus Erbsen, Linsen oder Kichererbsen hergestellt wird, die zu einem feinen Pulver vermahlen werden. Diese von Natur aus glutenfreie Backzutat ist reich an Protein, Ballaststoffen, Vitaminen und Mineralstoffen. Ich gebe bei meinem Brot 10 Prozent Bohnenmehl zum Dinkelmehl.
