Organic bean flour

Grown by our farmer. It naturally contains emulsifiers that improve dough formation.
It also improves oxidative processes in the flour, which contributes to a better formation of the gluten.
The color of the baked goods becomes slightly more yellowish. The addition of this flour is particularly recommended when making baguettes. Bean flour is made from the inside of the bean, with the skin and sprout removed. Between 0.5 and 2 % bean flour is added to 1 kg of flour.
The field bean (Vicia faba), cattle bean, Faber bean, fava bean, broad bean, broad bean, hog bean, large bean, horse bean, also known as broad bean. Bean flour was also often used in times of emergency and war to reduce grain consumption. As our bean flour is ground on a stone mill, it may contain traces of gluten.
