Organic rye baking malt dark enzyme-active 1 kg

Also known as malt flour, barley malt, aromatic malt or colored malt.

This malt is suitable for all doughs - a classic example of its use is Swedish / Viking bread rolls or malfabrot. Malting produces sugars that are beneficial for browning and yeast activity. Dark baking malt is heated more during malting. This causes the enzymes in the grain germs to die off. This also produces the characteristic color of the malt. Enzyme-active malt is not heated as much, which is why it is lighter in color and the enzymes are still active. Malt has been used as a baking agent for centuries and in the past was often sourced from breweries.

Note: Suitable for use in bread roll doughs and bread doughs. Add 10-100 g baking malt to 1 kg of flour (depending on the desired browning and taste). To start with, we recommend 50 g of malt flour per 1 kg of flour, which you soak in double the amount of water before use.

Tip: It is beneficial to mix the baking malt with water first so that it can swell. If you add it directly to the dough, it removes the water. Your dough will firm up and your rolls will be less fluffy and have a drier crumb (the soft part inside the roll).

Das Backmalz ist sehr gut, die Verpackung vom Backmalz ist vorteilhaft, da man nach jedem Verbrauch das Backmalz wieder luftdicht verschließen kann. Die Bestellung war sehr schnell da. Gerne wieder, kann ich jedem nur empfehlen!!!!
