This barley malt flour is roasted more intensely than our dark baking malt. Just right for those who want really dark malt with a very strong roasted aroma.
Suitable for use in bread roll doughs and bread doughs, add 10-100 g of baking malt to 1 kg of flour, depending on the desired browning and taste.

To start with, we recommend 50 g of malt flour per 1 kg of flour, which you soak in double the amount of water and leave to swell for an hour before use. The water should be lukewarm and should not be taken from the amount of water for the dough.

It is beneficial to mix the baking malt with water first so that it can swell. If you add it directly to the dough, it will remove the water from the dough. Your dough will become firm and your rolls will be less fluffy and have a dry crumb (the inside of the roll).

The malt also influences the fermentation of the yeast through its sugars.

Seit kurzer Zeit backe ich mein Brot mit einem Brotbackautomaten selbst und probiere verschiedene Zutaten aus. Es war meine erste Bestellung bei Spiegelhauer und ich bin rundum zufrieden, sowohl mit der Lieferung als auch mit dem Backmalz. Die Menge Backmalz auf 0,5 kg Mehl ( Bielmeier-Küchenmeister Brotbackmischung Vital-Brot ) habe ich mit 50g ausprobiert. Das Brot hat eine schöne, dunkle Farbe bekommen und ist wunderbar aufgegangen und auch geschmacklich ist der Einsatz des Backmalzes unbedingt zu empfehlen.

Ich backe schon längere Zeit mit Backmalz aber dieses ist Spitzenklasse denn es bringt durch die extra dunkle Röstung einen sehr guten Geschmack an das Brot.Auch die Triebkraft wird dadurch noch unterstützt.
