Acerola powder improves dough development and replaces ascorbic acid in organic bakeries.
When acerola powder is used in the dough, the gluten structure forms much better.

The baked goods become more airy and have a great crust.
Especially in harvest years with poor weather conditions, this is a good way to process the grain.

Dosage: 0.01 to 0.1 % of the total amount of flour.

For easier dosing, we recommend making a concentrate / mixing 1 to 10 with flour.

Recommended storage:

- Temperature: ideally not above 20 °C
- relative humidity: ideally not above 40 %
