Butter and milk from Demeter farmers
Our Saxon Organic Christmas Stollen get their unmistakable, melt-in-the-mouth texture from the use of high-quality butter from organic farming. This butter, obtained from cows fed on fresh grass and fragrant hay, provides a particularly rich aroma and enhances the natural taste of the exquisite ingredients. The milk in the dough comes fresh from the Demeter farm Steinert. An important aspect of keeping these cows is that they are allowed to keep their horns. These play a crucial role in the animals' metabolism and have a positive influence on the quality of the milk. The horns are not only important for digestion, but are also an expression of the cow's dignity and wholeness - a natural and animal-friendly husbandry that is directly reflected in the quality and taste of our stollen.
Regionality
We source our grain exclusively from Demeter farmers in Saxony, such as the Steinert farm in Hohenstein, the Wjesela farm in Crostwitz and the Risse farm in Niederau. It is ground in the Rätzemühle mill in Göda. We only use the best wheat from the harvest for our stollen, which is specially processed into high-quality organic stollen flour.

We pay attention to every detail in our bakery. From the water, which is used in almost every product, to the salt, which is only processed in small quantities. We only use sea salt without additives such as iodine, fluorine or anti-caking agents - the result is a stollen that not only impresses with its ingredients, but also with our commitment to selection and processing.

The right way to handle organic Saxon Christmas Stollen
It is best to store the organic stollen in the refrigerator at 3 to 8 °C. Take the stollen out of the fridge one to two hours before eating and allow it to warm up to room temperature. This allows the flavors to develop optimally and the stollen becomes nice and moist. Now take the stollen out of the bag and place it on a stollen board or a flat, odorless wooden cutting board. Please do not place it on a plate, otherwise it could break. Cut the stollen in half with a large, smooth knife and cut even, finger-thick slices from each half. After eating, push the two halves back together so that the stollen cannot dry out. Now wrap it back up in the plastic bag and store the stollen in the fridge again.
