Just like the Dresdner Christstollen, the Dresdner Eierschecke is a traditional cake that is baked in many variations. Even though the basic ingredients are almost the same, every baker has their own special recipe, which they guard like a secret. Originally invented as a sheet cake, the Dresdner Eierschecke can also be baked in a round baking tin. All you have to do is reduce the amount of ingredients. A yeast dough is prepared as the base for this Saxon specialty, which is then topped with a rich mixture of butter, eggs and cream quark. All Dresden bakeries make the Eierschecke every day, even in large quantities.
How did this popular cake come about?
For many decades, sheet cakes were one of the most important meals for the poorer sections of the population. At the beginning of the 19th century, sheet cakes were a common dish among farmers and miners and were primarily intended to satisfy. The Eierschecke was different. It was invented by middle-class housewives as a genuine Sunday cake for pure indulgence. With its rich egg and quark filling, the pastry had expensive ingredients for the time and was only affordable for the well-off. Today, of course, this has long since changed. Fortunately, the Eierschecke is affordable for everyone and is not one of the most popular and best-selling specialties in Dresden for nothing.
What's inside the Dresdner Eierschecke?
As a rule, Eierschecke consists of three layers. The bottom layer is the yeast dough base, the middle layer is a quark and vanilla pudding filling and finally the cake is coated with a mixture of egg yolk, butter, vanilla pudding, beaten egg white and sugar. Baking this specialty requires a little practice. Even the writer Erich Kästner was enthusiastic about the specialty and expressed his regret that it was only known locally, because the rest of humanity was missing out on something unique.

Where do the ingredients for our Eierschecke come from?
The most important thing is the quark, which we get from the Steinert farm. It costs us three times as much to buy as conventional quark from a baker's wholesaler. But it's worth it! It has a completely different aroma, just as quark should taste. The next important raw material is eggs, which we have delivered weekly from Gut Gamig, and here too there is a clear difference in quality. This also means that we don't need to use any coloring, as the eggs alone give the curd a beautiful yellow color. This all ensures a balanced natural flavor, so that we can dispense with additional flavors such as vanilla, lemon or bitter almond.
