Gluten is a specific combination of proteins, lipids and carbohydrates that is contained in some types of grain. In combination with water, it creates a gluten mixture that makes the dough elastic and rubbery. This is why gluten is often referred to as "gluten protein".
However, this mixture is not only important for rising, it also improves the baking properties. This is because the elasticity means that the gases produced during proofing can be better retained during baking. The gluten also ensures that the resulting shape remains stable. Replacing it is therefore not easy at first glance.
However, some people have problems with foods containing gluten. For example, the gluten can cause irritation in the gastrointestinal tract (keyword: coeliac disease). However, there are also people who are simply sensitive to these ingredients (gluten sensitivity). It can therefore be beneficial to buy gluten-free bread.
Which types of flour are gluten-free?
There is a widespread opinion that wheat is the "main culprit" when it comes to gluten. In fact, however, many more types of grain contain the gluten. These include, for example, spelt, kamut, einkorn, durum wheat and emmer.
If you want to reduce the amount of gluten, you can opt for low-gluten flours such as rye, oats and barley. Truly gluten-free grains include millet, corn, rice and teff. However, gluten-free flours can also be made from other foods, such as quinoa, amaranth, buckwheat, potatoes, soy, almonds or pulses.

How can you store gluten-free bread?
In principle, the storage of gluten-free baked goods does not differ greatly from products containing gluten. Bread is best kept in a bread bin - it's cool, dry and clean there. Only very few types should be kept in the fridge (for example our organic lower carb protein bread).
Alternatively, you can buy gluten-free bread, cut it into slices and freeze it. This makes it easy to defrost and enjoy when needed. To do this, either place the slices on a cake rack, for example, with some kitchen paper underneath. This will absorb the moisture and prevent the pastries from getting soggy. Or you can use a toaster. Then it comes out warm and slightly crispy straight onto your plate.
