Organic raisins / raisins

Raisins are small seedless, dried grapes.

The term raisins comes from the Turkish sultan. Raisins were reserved exclusively for him and were therefore named after him. Our organic raisins dry naturally under the sun. They are characterized by their special aroma and captivate with their typical slightly sour raisin taste with a restrained sweetness. We also use these raisins for our Dresden Christmas Stollen.

Tip: We have all the ingredients you need to bake your own stollen.

What are the benefits of raisins in baked goods?

They have a flavour-enhancing effect and harmonize very well with other flavours without masking them.
A natural sweetness instead of industrial sugar.
They prevent the formation of mold and preserve baked goods in a natural way.
The organic raisins remain moist for longer and therefore improve the freshness and juiciness of the baked goods.

Using organic raisins correctly in baked goods

Only add the raisins to the dough at the end of the kneading process. This prevents them from being damaged and allows them to retain moisture better.
Pay attention to the kneading speed! It should be set to a low speed. Also, the dough will not turn brown due to "raisin juice".
Do you want your pastry to be even juicier? Then soak the raisins in warm water at 25-30° C for at least 4 hours before processing.
You can also replace some or all of the water with orange juice. Add approx. 100g to 1 kg of raisins.
