How the Stollen came to Christmas

Have you ever wondered why we love to eat stollen at Christmas? The answer is hidden in its history. Because it was back in 1474 that stollen was first documented in Dresden. However, back then it was by no means the treat that we associate with the yeast pastry today. Instead, it was a fasting meal made exclusively from flour, yeast and water.

The reason for this was the strongly Catholic nature of the Saxon country at the time. The church preached abstinence and this included animal products such as butter and milk. However, the people of Dresden have always been true connoisseurs, which is why Elector Ernst von Sachsen asked the Pope of the time for permission to use more substantial ingredients in his pastries. In the document known today as the „Butterbrief“, the head of the church finally granted it. From then on, the bakeries began to develop a new stollen recipe.

The original Dresden Christmas stollen became known nationally and later beyond the borders from 1540, when the first bakers brought a giant stollen - as it is still baked today at the Dresden Stollen Festival - to their king at Christmas. Since then, this delicacy has been one of the traditional Christmas dishes that no festive table should be without.

Of course, in keeping with the history of our range, there is one thing that should certainly not be missing: the original Dresden Christmas Stollen. Once you've eaten enough, it's time to store them. Our first tip is to always cut out pieces from the middle. This way you can simply push the stollen back together afterwards and the moisture is ideally preserved. In addition, our baked goods should always be stored in a cool, dark place. The fridge (between 3°C and 8°C) is therefore the perfect place to store them.
