Botanically speaking, buckwheat is not a grain at all, but a so-called knotweed plant, which is why it does not contain gluten. This makes it particularly interesting for people with gluten intolerance (coeliac disease). However, it can also be used to enrich other diets, for example if you are following an alkaline, vegan or raw food diet. Our organic product impresses with the following properties:

The husk of the small grain contains the natural red pigment fagopyrin, which can cause skin irritation when exposed to sunlight in large quantities. It is therefore important that you rinse unhulled buckwheat thoroughly in hot water and leave it to soak in hot water for around 20 to 30 minutes. You can then consume it without hesitation. We always bake our buckwheat bread and rolls with sprouted buckwheat. The swelling and subsequent germination increases the bioavailability of various vital substances in the small, angular grains. These include lysine and rutin, as well as calcium, iron and B vitamins. In addition, the fiber and protein they contain can be better utilized.

You can buy buckwheat and simply sprout it yourself the day before. To do this, wash the whole (with husk) or hulled seeds thoroughly. Then allow it to soak in clear water for 30 to 60 minutes before pouring it off. Now the seeds only need about 16 hours to germinate, which is why even spontaneous cooking and baking ideas can be implemented quite quickly.
