The benefits of our Demeter barley

If you take a closer look at barley, you will first come across some facts that sound a little critical. The grain is particularly starchy and contains gluten, but has no baking properties worth mentioning. However, it really depends on the variety. In our online store at the Spiegelhauer organic bakery, we therefore offer naked barley, or to be more precise, the Demeter variety Pirona.

This is particularly easy to process as it has no husk by nature. This makes it much easier for you to enjoy the many positive benefits of barley. For example, the grain contains numerous minerals (e.g. magnesium, calcium, potassium, iron and phosphorus) and also provides essential amino acids (including leucine, phenylalanine and valine). Barley is also rich in ß-glucan, a soluble dietary fiber. This can bind harmful substances in the intestine and thus eliminate them from the body.

In general, the high starch content is not necessarily a disadvantage of the grain. The carbohydrates it contains are relatively easy to convert into sugar and therefore help with concentration during mental exertion. What you can do with our barley

Barley itself is primarily known as the basis for spirits and also as animal feed. Some people may know the grain as pearl barley, groats or stew. But it can also be used for baking! Our naked barley is particularly suitable for this when it is used in combination with spelt, wheat or einkorn, for example. The barley content can be up to 50 %. You can grind our whole grains into flour at home as required.
