The rock cellar is made of Granicium®. It is made by hand in our workshops. Granicium is unique in the world. The material consists of ground granite which is fused back into a solid "rock" at a high temperature after processing. Granicium® has advantages that conventional ceramics cannot offer.
A balanced, uniform microclimate builds up in the rock cellar, which the body (ceramic) passes on. Granicium® is therefore ideal for maturing cheese. The rock cellar achieves what cheese aficionados desire.
Granicium® is a purely natural product, food-safe, extremely hard and durable.
Felsenkeller tips for use
- Keep the rock cellar in the pantry, preferably on the floor.
- If you don't have a pantry, give it a quiet, dark place, not too high up, preferably low down, because the temperature is more even there.
- If you don't have a cool place in the house, you can also store the cheese in the fridge. The maturing process slows down considerably at low temperatures.
- Fill the plate with cheese to your taste - hard cheese, Brie, Camembert, Munster, cream cheese - mix cow, sheep and goat. What you like. Very wet cream cheese, which also absorbs water in the pack, will also do so in the rock cellar. Dab off any extra water if necessary.
- If you are expecting guests in the evening, stock the rock cellar in the morning.
- A small sprig of rosemary, lavender or thyme looks good on the cheese. Not only does it decorate, but it also imparts its herbal flavor to the cheese.
- Don't just use the rock cellar when you have guests over, it brings pleasure every day, so much so that red wine or sweet wine need not be obligatory.
- You can use the beautifully shaped cap of the rock cellar as a bowl for fruit or bread on the table.
- Before storing new cheese, please wash the rock cellar thoroughly by hand with household cleaner or in the dishwasher to prevent mold spores from spreading to the fresh cheese.
